It’s been 8 years since I last visited Korea, and it was also the time that I’ve been craving for this soy milk cold noodles! So when my friend asked me what I wanted to eat first, this is it. Without hesitation. 🍜

Soybeans are boiled, blended, then cooled to create thick, milky soup. The noodles were served with a plate of kimchi for extra flavour. This dish is the only item available during the summer. A ball of noodles immersed in soy milk is served in a cold metal bowl, and the consistency of the soup allows the noodles to be coated with soymilk without having to use a spoon. What amazed me was the flavour of the soybean broth. I was impressed that simple soup of blended soybean could contain such deep flavour!
